Pecan Pie¶

Ingredients:
1x 9-inch pie dough
2 cups toasted pecan halves
3/4 cup dark corn syrup (or light syrup if unavailable)
1/2 cup packed light brown sugar
2 tsp molasses
3 tbsp melted butter
3 large eggs, at room temperature
1 tsp vanilla extract
1/2 tsp salt
2 tsp ground cinnamon
Procedure:
Butter pie pan
Place pie dough in pan
Press pie dough down so there are no gaps
Crimp edges of dough with a fork
Place dough in fridge
Toast pecans and let cool
Preheat oven to 375F
Mix corn syrup, brown sugar, and molasses in bowl until combined
Add melted butter, combine
Add eggs one at a time, combine
Add vailla, salt, cinnamon, combine until uniform
Place pecans in pie crust, carefully pour in liquid filling
Bake at 375F for 15 minutes
Cover crust with foil
Lower temperature to 350F, bake for 20-25 minutes or until center does not jiggle when tapped
Extra Fancy Pecan Pie¶
Extras for Fancy Version add:
1 tbsp melted butter
2 tsp ground cinnamon
Fancy Version Procedure:
Roll out chilled dough until 1/4 in thick
Brush with melted butter
Sprinkle with cinnamon and spread evenly
Roll dough into a tight spiral
Refrigerate/freeze until firm (optional)
Cut into 1/2 inch rounds
Rub pie tin with butter
Place rounds in pie tin so they are touching
Flatten with fingers so they expand and fill the gaps
Press until everything is together and crust has even thickness
